Sushi is a world-renowned Japanese meal that consists of raw fish. It is considered the king of Asian dishes, which has moved to Arab and Western kitchens, and it can be prepared in different shapes and ingredients, and among the most famous of these ingredients are salmon and tuna, in addition to nori paper, it is a dried sea algae that gives it a beautiful shape. Chef Atef Hassan said that sushi should be wrapped professionally after following these steps, “Bring a seaweed sheet and put a quantity of rice on it, then in the middle of the rice; add the avocado and cucumber slices, then the fish of your choice, noting that the fish is fresh and not frozen". Chef Mohamed Galal said that for making sushi at home, one should add a spoonful of sugar to a kilo of rice while boiling, because the starch inside the rice with sugar gives consistency to the sushi, and it is also necessary that the rice be cold when placed on seaweed paper. Galal added that Sushi can be cooked easily at home, if sushi materials are available, such as seaweed paper, which is available in large markets”. While the Japanese dish, Sushi, has gained wide popularity worldwide, Arabs seem to prefer fried sushi to raw one. Surprisingly, fried sushi can be easily prepared at home using simple, handy ingredients. Chef Mohamed Hassan said that a traditional fried sushi meal would consist of rice rolls stuffed with several fillings, either with vegetables, chicken, seafood, salmon or tuna, and many other fillings. The sushi is covered with seaweed paper. Mohamed illustrated that to prepare fried sushi at home, one must acknowledge that there are two ways to wrap, one is to cover all the ingredients on one layer of algae paper, and the other is to wrap the ingredients around the algae paper on both sides. Fried Sushi Ingredients: 1 ½ cup rice, washed and soaked 1 ½ spoonful of sugar 2 seaweed sheets 1 egg ½ cup starch ½ cup white flour. 1 glass of ice water. 1 ½ cup of rusk. 3 spoonful vinegar A pinch of salt Mixed vegetables (avocado, sliced, carrot, sliced lengthwise, 2 cucumber, sliced long) ¼ kilo of thickly sliced salmon Sushi making mat covered with a bag. How to roll sushi slices:- Boil rice until it softens In a separate pot, over low heat, dissolve sugar, salt and vinegar Add the vinegar mixture to the rice, and mix them together in the bowl. Unroll a sushi rolling mat, then lay a sheet of black sushi rolls over it and spread half the amount of rice on it, and press lightly on the rice Add a long thread of salmon, avocado, cucumber, and carrots Roll the nori sheet tightly, then wet the end of the roll and seal it closed Cut the roll into circular slices Repeat the steps with the second nori sheet Another way to wrap: Unroll a sushi rolling mat, then lay a sheet of black sushi rolls over it, spread half the amount of rice on it, and press lightly on the rice. Turn the black sheet over so that the rice is on the bottom side Arrange the mixed vegetables and salmon on the empty side Roll the mat with the black sheet, applying pressure while rolling, so that the rice is visible on the outside. How to prepare fried sushi: Put the egg in a large bowl, beat it well, then add the ice water, and mix well Add the flour, starch, vinegar, and salt, and mix well Dip the sushi rolls in the egg mixture, then in the breadcrumbs Heat the oil in a frying pan to 350°C Then fry it in oil until it turns golden Remove the sushi from the oil, let it cool completely, and then cut it into slices of medium thickness How to apply: Cut the sushi into square pieces. Thus, it is ready to be served with sauces For beginners, the following sauces are recommended: Oyster sauce, soy sauce, balsamic sauce, chili sauce, and wasabi sauce.
